Step 1: Prepare the Dough
In a large mixing bowl, combine 1 ½ cups whole wheat flour, 1 teaspoon baking powder, and a pinch of salt. Mix well to ensure even distribution.
Add ¼ cup unsweetened applesauce and 2 tablespoons cold water to the dry ingredients. Use a fork or your hands to gently mix until a soft dough forms. If the dough feels too dry, add a teaspoon of water at a time until it comes together.
Shape the dough into a ball, wrap it in plastic wrap, and let it rest in the fridge for 15-20 minutes. This helps the dough firm up and makes it easier to roll out.
Step 2: Make the Filling
While the dough chills, prepare the filling. In a small bowl, mix ½ cup low-fat cream cheese, 2 tablespoons honey or maple syrup, and 1 teaspoon vanilla extract until smooth and creamy.
Gently fold in ½ cup fresh berries or diced apples for a burst of fruity flavor. Set aside.
Step 3: Assemble the Pastries
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
